Sweet & Spicy Cilantro Sauce

When I buy fresh cilantro for a specific recipe, it seems as though I can never use up the entire bunch before it goes bad. Enter… sweet and spicy cilantro sauce! It effectively uses up the remaining cilantro and pairs brilliantly with virtually any recipe that calls for cilantro (tacos, fish, black beans… you name it).

Below, I have suggested some proportions, but this recipe is delightfully flexible, so feel free to adjust it to your personal tastes and to what you have on hand.

  • 1 cup fresh cilantro
  • 2 tablespoons chopped raw onion*
  • 1 hot pepper (jalapeño or Serrano are great options)
  • Juice from 1 lemon**
  • 1/4 cup water
  • Drizzle of olive oil
  • 1 squirt of honey
  • Kosher salt to taste

* 1 clove garlic can be substituted

** Lime can be substituted

  1. Put all of the ingredients in a blender and purée until smooth. If necessary, add a little water until the desired texture it achieved.
